Nettle & Raspberry Leaf Green Salad with Lemon Herb Dressing

A nutrient-dense salad built around the iron-rich power of nettle and the mineral depth of raspberry leaf, brightened with a zesty lemon dressing.

Ingredients

  • 4 cups mixed greens

  • 1 tsp dried nettle leaf (crumbled)

  • 1 tsp dried raspberry leaf (crumbled)

  • 1/2 cup shredded carrots

  • 1/4 cup sliced cucumber

  • 1/4 cup cherry tomatoes

  • 1/4 cup toasted pumpkin seeds

  • Dressing: 3 tbsp olive oil, 2 tbsp lemon juice, 1 tsp raw honey, salt and pepper to taste

Instructions

Whisk dressing ingredients together and let the dried herbs steep in the dressing for 10 minutes to infuse. Toss all salad ingredients together, drizzle with herb-infused dressing, and serve immediately.

Dandelion Root & Peppermint Detox Salad

A bold, bitter-forward cleansing salad inspired by liver tonic traditions — balanced with cooling peppermint and a sweet citrus dressing.

Ingredients

  • 3 cups arugula or dandelion greens

  • 1 tsp dried dandelion root (finely ground or steeped and cooled as a dressing base)

  • 1/2 tsp dried peppermint leaf (crumbled)

  • 1 naval orange, segmented

  • 1/4 red onion, thinly sliced

  • 1/4 cup walnuts

  • 1/4 avocado, sliced

  • Dressing: 2 tbsp apple cider vinegar, 1 tbsp olive oil, 1 tsp orange zest, 1 tsp raw honey

Instructions

Brew 1 tsp dandelion root in 1/4 cup hot water for 15 minutes, cool, and use as the liquid base for your dressing. Whisk in remaining dressing ingredients. Crumble peppermint leaf over assembled salad and drizzle with dressing just before serving.
